Chili is a dish that many people enjoy when the temperature starts to cool down outside. But, this hearty and delicious dish can really be enjoyed any time of year. Plus, it’s a one-dish meal, so once it’s made you don’t need to worry about sides. And, it usually garners leftovers, so you can enjoy this dish another day without doing any work!
Here is a simple and easy chili recipe that you can try:
Ingredients:
- 1 tablespoon olive oil
- 1 medium yellow onion – diced
- 1 pound lean ground beef
- 1 ½ tablespoons chili powder
- 2 tablespoons ground cumin
- 2 tablespoons white sugar
- 2 tablespoons tomato paste
- 1 tablespoon garlic powder
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
- Cayenne pepper to taste (a little goes a long way)
- 1 ½ cups beef broth
- 1 can diced tomatoes
- 1 can red kidney beans
- 1 can tomato sauce
- Shredded cheddar cheese to taste
- Sour cream to taste
Directions:
- Add the olive oil to a large pot and place over medium-high heat for two minutes. Add the onion and cook for five minutes, stirring occasionally.
- Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until beef is browned – about 6-7 minutes – stirring occasionally.
- Add the chili powder, cumin, sugar, tomato paste, garlic powder, salt, pepper, and cayenne. Stir until combined.
- Add the broth, diced tomatoes with juice, drained beans, and tomato sauce. Stir until combined.
- Bring the liquid to a low boil. Then reduce to medium-low heat to gently simmer the chili, uncovered, for 20-25 minutes, stirring occasionally.
- Remove the pot from the stove and let the chili rest for 5-10 minutes.
- Serve chili in a bowl, and top with desired amount of shredded cheddar cheese and sour cream.
